A Fool and his Money are Soon Lobster

Tonight I started thinking about cooking again. I pulled up my cooking calendar on Google and I only have two meals scheduled. Lobster Tacos on April 9th (decided by you the readers) and Special Occasion Goulash for the weekend of my Birthday. It’s what Mitch has on his birthday every year and if it’s good enough for him then its good enough for me. I still have 39 entrées left to make and 20 some-odd side dishes and desserts (I have 90 recipes left to make when you include sub-recipes). Given that the year is only 1/4 over I am doing pretty good, but it still seems strange to not have more meals planned. I thought things might be too hectic upon returning from vacation so I purposely left this weekend open for no cooking. However, there is a pound of corned beef calling to me in the freezer and I think I will turn it into Corned Beef Hash this Saturday night.

I like to be at least two or three weeks out so that I have time to find ingredients and research any new cooking techniques. I am thinking French Dips are in the near future and maybe Pancakes. You wouldn’t think pancakes would need much planning, but Mitch is very particular about the mix that you use and I’m probably going to need to order it online.

When I put up the poll to decide what meal I am cooking next week there was a lot of interest from folks in partaking of Lobster Tacos.  Mitch talks about pricing this meal and from what he has said I gather lobster is expensive. I would love to invite everyone who wants to come, but I just don’t think that is feasible. Instead I have decided to choose a random person (plus guest) by drawing names out of a hat. If you would like to be included please leave me a comment letting me know. I will draw names on Sunday evening with Kira as my witness.

Damn Random Thing About Me #2: For about 9 months during college I worked for the Department of Energy in Richland, WA. I stared at a computer microscope image and counted hits on detection badges made by radon gas. These badges were sent from all over the country and it was part of a big study. I imagine easily obtainable software could perform the same task today.
