Creamy Orange Marmalade Pie
I found this recipe while I was looking for something to use up my Orange Marmalade. I probably needn’t have worried since it was disappearing pretty fast on its own, but I’d hate for any of it to go bad. I made it as I found with lite cream cheese, lite sour cream and skim milk. If I make it again I may make a fatter version just to see if it can be even better.
- Graham Cracker Crust – I bought mine, but if you really want to make it from scratch here you go.
- 2/3 cup Orange Marmalade (see recipe, p. 145 of Damn Good Food)
- 1/2 cup lite sour cream
- 8 oz lite cream cheese
- 1/2 cup skim milk
- 1/2 cup boiling water
- 1 package unflavored gelatin
- 1/4 cup granulated sugar
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
It doesn’t get much easier than this. First mix the package of gelatin in the boiling water and set to the side to cool.
Then put everything except the gelatin mixture and the marmalade into a food processor and blend until smooth.
Mix in the gelatin and marmalade and gently pour the whole thing into the pie shell. Chill for 3-4 hours and then eat. If you want to make it look fancy when you serve it then you can drizzle some chocolate syrup over it and/or put on a twist of orange peel.
